Roast Tomatoes

Simple to prepare, this recipe unlocks the aromatic flavours of Italy and can be served hot or cold, bruschetta-style with sourdough bread.

Ingredients

  • 2 tbsp Carla's Tuscan blend

  • 300g mixed cherry tomatoes

  • 1 tbsp olive oil

  • Sourdough bread

Instructions

  1. Preheat the oven to 180°C/160°C fan

  2. Tip cherry tomatoes into a baking dish and drizzle with olive oil

  3. Sprinkle Carla's Tuscan blend over the tomatoes with a pinch of salt and a few grinds of fresh black pepper (to taste)

  4. Roast in the oven for 20-25 mins

  5. Serve on your favourite toasted bread and enjoy
