Moonblush Tomatoes

These are so simple to prepare and make a lovely addition to almost any salad


6-8 (as part of a side salad)

3-4 hours or overnight


  • Carla’s Tuscan Blend

  • 200g cherry tomatoes, halved

  • Drizzle of olive oil


  1. Preheat the oven to 60 degrees, or if you have a warming drawer, switch this on. 

  2. Cut the tomatoes in half so that the pretty inside shows. 

  3. Place on a baking tray and drizzle with olive oil, then sprinkle generously with Carla’s Tuscan seasoning. 

  4. Place in the warm oven for 3-4 hours until they have shrunk slightly, and most of the moisture has gone. 

  5. Use them as a salad topper to make every salad beautiful!

  6. Alternatively, if you have been baking with a hot oven, switch the oven off completely and place the tomatoes inside. Leave them in the oven overnight and when you come down in the morning, they’ll be ready!

Tip: These can be stored in the fridge for 1-2 days in an airtight container. 

Tip: We love a simple salad, (as pictured for this recipe) with mixed leaves, avocado, red onion, moonblush tomatoes and drizzled with a french style vinagrette.
