Dukkah Crusted Salmon

A fresh and easy to cook salmon dish delicious paired with couscous, salad and a squeeze of fresh lemon.

Ingredients

  • 3 tsp Carla's Dukkah Blend

  • 2 Salmon fillets (1 per person) 

  • Approx 2 handfuls of hazelnuts*

  • 3 tsp of olive oil (or oil of your choice)

  • Couscous or rice and mixed leaf salad to serve

  • 1 lemon, cut into segments to serve

Instructions

  1. Roast the nuts* for 10 mins at 180°C

  2. Blitz the nuts in a blender until finely chopped

  3. Mix the nuts with the Dukkah blend

  4. Mix 3 tsp of the Dukkah and nuts mix with 3 tsp olive oil and a pinch of salt

  5. Spread over one side of each salmon fillet

  6. Cook for 12-15 minutes in a pre-heated oven at 180°C until flaky

* For those who are not keen on nuts or have an allergy, chickpeas would be a good alternative
