Christmas Slice

This simple and delicious traybake is full of warming festive flavour, an alternative to the traditional mince pie. Perfect with a mid-morning cup of tea.

Ingredients

  • 1 tbsp Carla's Sweet Spice

  • 150g margarine, melted

  • 200g demerara sugar

  • 25g walnuts, roughly chopped (optional)

  • 25g flaked almonds

  • 200g Self-Raising Flour

  • 75g sultanas

  • 1 egg

Instructions

  1.  Preheat the oven to 160 degrees, and line a 20cm x 30cm baking tin.

  2. Melt the margarine, and then add the rest of the ingredients in order. Mix well until completely combined.

  3. Place the batter into the tin, spread out evenly and bake for 30-35 minutes, until golden and a cake skewer comes out clean.

  4. Sprinkle with caster sugar while still warm.

  5. Cut into slices once cooled. Enjoy! The cake will keep in an airtight container for 2-3 days.
