Chipotle Grilled Corn Cobs

The warmth of the chipotle spice blend and the charred barbeque flavour make these corn cobs sing!

35 mins (including 30 mins soaking)

4-5 mins

Ingredients

  • 1-2 heaped tsp Carla's Chipotle Blend

  • 4 corn cobs

  • 3 tbsp butter

To serve:

  • crumbled  feta (optional)

  • 1 lime, cut into wedges (optional)

Instructions

  1. First, soak the corn in a bowl of cold water for 30 mins

  2. When ready to cook, drain the corn, and prepare the chipotle butter.

  3. Melt the butter in the microwave, and mix in the Carla's Chipotle Blend.

  4. Preheat the grill to medium-high. Brush the corn with chipotle butter to coat. Grill for about 4 minutes, turning frequently, or just until the corn is tender and nicely charred.

  5. Serve immediately topped with crumbled cheese, and serve with fresh lime slices, if desired.
